
Alongside Weisswurst, pretzels, and sauerkraut, Bavarian pork roast is a traditional German dish often served during Oktoberfest. If you can't make it to Munich this year, why not bring the tradition home by cooking this delicious Bavarian pork roast yourself?
Bavarian Pork Roast Recipe
To make this authentic recipe, be sure to use a quality pork loin with the skin on. The skin (bard) crisps up in the oven, balancing perfectly with the meat’s tenderness.
Preparation time: 15 minutes
Cooking time: Approximately 3 hours
Ingredients for 4 people:
- 1 pork loin with skin
- 1 onion
- 2–3 carrots
- 50 cl of Löwenbräu Triumphator or classic Lowenbrau
- 2 tablespoons of honey
- 2 tablespoons of oil
- 20 cl of vegetable stock
- Paprika
- Ground cumin
- Salt and pepper
Start by scoring the pork skin in a lattice pattern, leaving 3 cm between cuts.
Mix paprika, cumin, salt, pepper, and oil to create a marinade. If you’re marinating the meat in advance, omit the salt. Coat the pork thoroughly and place it skin-side up in an oven-safe dish. Let it sit for 1 hour at room temperature to absorb the spices.
Preheat the oven to 150°C (fan-assisted). Add 10 cl of vegetable stock to the dish and place the meat in the oven.
After 1 hour of cooking, add the remaining vegetable stock and 25 cl of Löwenbräu Triumphator. This Doppelbock offers rich malty and caramel notes that enhance the pork’s flavors. Alternatively, you can use another German dark beer.
While the meat cooks, prepare your vegetables: slice the onion and cut the carrots into thick rounds. After 1 hour 30 minutes of cooking, add the vegetables around the meat and baste everything with the juices from the bottom of the dish.
Continue cooking for another 1 hour 30 minutes, basting every 30 minutes.
Thirty minutes before the end (after 2 hours 30 minutes), mix two tablespoons of honey with some of the cooking juices. Brush this mixture over the pork crust and return the dish to the oven.
Once done, slice the pork and serve with traditional sides such as boiled potatoes or classic Bavarian red cabbage.
